Nicolas Capron-Manieux
Sommelier & Wine Consultant
I began my wine career under the tutelage of Master Sommeliers as an intern for the Intensive Sommelier Training Program at the International Culinary Center in Manhattan, where I earned the Walter Clore Scholarship as recipient of the highest score on the Certified Sommelier exam.
From there I cut my teeth in fine dining, joining COTE Korean Steakhouse as a founding sommelier. I quickly became COTE's inaugural Head Sommelier while the restaurant earned a Michelin star within just six months of opening.
After two years at COTE, I left to discover Burgundy, where I worked at Domaine Hubert Lamy. My experience at the domaine deepened my understanding of terroir, winemaking and the intricacies of the world's most sought-after wine region.
Upon returning home, I landed across Madison Square Park as Head Sommelier at Upland, where I resided until the spring of 2020. By August, itching to continue my pursuit of knowledge, I ventured up to the Finger Lakes to work at Ravines Wine Cellars. Amongst my tribe once again, I was reminded of a simple truth: wine is meant to be shared!
Nowadays I share my knowledge through a wine list of over 1,000 selections at Peak, and more intimately at my private wine events. I build upon my extensive experience every day to provide the best bottles and experiences to my guests and clients.
Santé!
